Zuppa Toscana Soup is a hearty, comforting dish inspired by the rustic flavors of Tuscany. This creamy soup features savory Italian sausage, tender potatoes, smoky bacon, and fresh kale simmered in a rich broth. A touch of cream adds luxurious texture, while a hint of red pepper flakes brings gentle warmth to each spoonful. Perfect for chilly evenings or when you crave a satisfying meal, Zuppa Toscana is easy to make and pairs wonderfully with crusty bread or a light salad.
Ingredients:
- 1 lb Italian sausage (mild or spicy)
- 4 slices bacon, chopped
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups water
- 4 medium potatoes, thinly sliced or diced
- 2 cups chopped kale (or spinach)
- 1 cup heavy cream
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Grated Parmesan cheese, for garnish
Instructions:
- Cook the Sausage and Bacon: In a large pot or Dutch oven, cook the sausage over medium heat until browned and crumbled. Remove the sausage with a slotted spoon and set aside. In the same pot, cook the chopped bacon until crisp. Remove with a slotted spoon and set aside with the sausage.
- Sauté the Onion and Garlic: Add the diced onion to the pot and sauté in the bacon fat until softened, about 5 minutes. Add the garlic and cook for 1 minute, until fragrant.
- Simmer the Broth: Pour in the chicken broth and water, scraping up any browned bits from the bottom of the pot. Add the sliced potatoes and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 10–15 minutes.
- Add the Kale and Sausage: Stir in the chopped kale and cooked sausage. Simmer for another 5 minutes, until the kale is wilted and tender.
- Finish with Cream: Reduce the heat to low and stir in the heavy cream. Let the soup heat through, but do not boil. Adjust seasoning with salt and black pepper.
- Serve: Ladle the soup into bowls and garnish with crispy bacon and grated Parmesan cheese.
Zuppa Toscana Soup is a crowd-pleaser that balances rich, creamy flavors with the freshness of greens. It’s a dish you’ll want to make again and again for its simple ingredients and comforting taste.
