Whole Roasted Okra And Tomatoes

This vibrant and simple dish is a celebration of summer’s bounty, showcasing the natural flavors of fresh okra and juicy tomatoes. Roasting the vegetables enhances their sweetness and adds a slight char, which brings out their earthy and tangy notes. Tossed in olive oil and seasoned with garlic, smoked paprika, and a hint of cayenne, this dish is both comforting and sophisticated. Perfect as a side for grilled meats or as a stand-alone vegetarian delight, it’s an easy, healthy, and flavorful addition to any meal.

Ingredients:

  • 1 pound fresh okra, whole and untrimmed
  • 1 pint cherry or grape tomatoes
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley or basil, chopped, for garnish
  • Lemon wedges for serving (optional)

Instructions:

  1. Preheat the oven: Set the oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the vegetables: Rinse and dry the okra thoroughly to prevent it from becoming slimy. In a large bowl, combine the okra and cherry tomatoes.
  3. Season the vegetables: Drizzle the olive oil over the okra and tomatoes. Add minced garlic, smoked paprika, ground cumin, cayenne pepper (if using), salt, and black pepper. Toss until the vegetables are evenly coated.
  4. Arrange on a baking sheet: Spread the seasoned vegetables in a single layer on the prepared baking sheet, ensuring they have some space between them for even roasting.
  5. Roast the vegetables: Place the baking sheet in the preheated oven and roast for 20–25 minutes, flipping the okra halfway through. The okra should be tender and slightly charred, and the tomatoes should be blistered.
  6. Serve: Transfer the roasted okra and tomatoes to a serving platter. Garnish with chopped parsley or basil and serve with lemon wedges on the side for a burst of freshness.

Tips:

  • For a more robust flavor, add a sprinkle of grated Parmesan or crumbled feta before serving.
  • Experiment with other spices like coriander or turmeric for a unique twist.

Enjoy this wholesome and delicious dish!
