VEAL PICCATA

Veal Piccata is a classic Italian dish that showcases tender veal cutlets cooked in a luscious, tangy lemon and caper sauce. Lightly floured and pan-fried to golden perfection, the veal is then simmered in a buttery sauce infused with the bright flavors of citrus and briny capers. This elegant yet simple dish is perfect for special occasions or an elevated weeknight dinner. Serve it with a side of pasta or roasted vegetables to soak up the irresistible sauce.

Ingredients:

  • 1 pound veal cutlets, pounded to 1/4-inch thickness
  • 1/3 cup all-purpose flour
  • Salt and black pepper, to taste
  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/3 cup dry white wine
  • 1/4 cup chicken stock
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions:

  1. Prepare the Veal: Season the veal cutlets with salt and pepper on both sides. Dredge them lightly in flour, shaking off any excess.
  2. Cook the Veal: Heat the olive oil in a large skillet over medium-high heat. Add the veal cutlets and cook for 2-3 minutes per side, or until golden brown and cooked through. Transfer the veal to a plate and cover loosely with foil to keep warm.
  3. Make the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes, then add the chicken stock, lemon juice, and capers. Cook for another 2-3 minutes until the sauce thickens slightly.
  4. Combine and Serve: Return the veal cutlets to the skillet and spoon the sauce over them. Cook for 1-2 minutes to heat the veal through and allow it to absorb the flavors of the sauce.
  5. Garnish and Enjoy: Transfer the veal to serving plates and pour the sauce over the top. Garnish with chopped fresh parsley and serve immediately.

Veal Piccata is a restaurant-worthy dish that’s surprisingly easy to make at home. Its rich yet zesty sauce is sure to impress your guests or make a regular dinner feel like a special occasion.
