Ingredients

  • 2 cans (5 oz each) tuna in olive oil, drained

  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Cook the Potatoes: Place the halved potatoes in a pot of salted water and bring to a boil. Cook until tender, about 12–15 minutes. Drain and set aside to cool slightly.
  2. Blanch the Green Beans: In a separate pot of boiling salted water, cook the green beans for 2–3 minutes until crisp-tender. Transfer immediately to an ice bath to stop the cooking. Drain and pat dry.
  3. Cook the Eggs: Place the eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 9 minutes. Transfer the eggs to an ice bath, peel, and slice into halves or quarters.
  4. Make the Dressing: In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper until well combined.
