Ingredients

  • 12 oz spaghetti
  • 1 lb large shrimp, peeled and deveined

  • 1/2 teaspoon red pepper flakes (optional)
  • 1/3 cup dry white wine (or chicken broth)
  • Juice and zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (plus extra for garnish)
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. Cook the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Scampi Sauce: In the same skillet, melt the butter with the remaining olive oil. Add the garlic and red pepper flakes (if using), and sauté for 1-2 minutes until fragrant. Stir in the white wine and cook for 2-3 minutes, letting the alcohol evaporate.
  4. Add Lemon and Shrimp: Reduce the heat to low. Stir in the lemon juice, lemon zest, and fresh parsley. Return the cooked shrimp to the skillet and toss to coat in the sauce.
  5. Combine with Spaghetti: Add the cooked spaghetti to the skillet, tossing to combine with the shrimp and sauce. If the dish seems dry, add reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
  6. Serve: Season with additional salt and pepper to taste. Garnish with more parsley and grated Parmesan cheese. Serve immediately.
