MUSHROOM PULAO

Ingredients:

  • 1 cup basmati rice, rinsed
  • 1 1/2 cups mushrooms, sliced (button or cremini work well)

  • 2 tablespoons vegetable oil or ghee
  • 1 teaspoon cumin seeds
  • 2-3 green cardamom pods
  • 1 small cinnamon stick
  • 2-3 cloves
  • 1 bay leaf
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon ground coriander
  • Salt, to taste
  • 2 cups water or vegetable broth
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Optional: 1 tablespoon raisins or cashews for added flavor

Instructions:

  1. Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Set aside to drain.
  2. Cook the Spices: Heat oil or ghee in a large pot over medium heat. Add the cumin seeds, cardamom pods, cinnamon stick, cloves, and bay leaf. Sauté for a minute or until fragrant.
  3. Sauté the Onions and Mushrooms: Add the thinly sliced onions and cook until they turn golden brown, about 5-7 minutes. Add the sliced mushrooms and sauté until they soften and release their moisture, about 5-6 minutes.
  4. Add the Spices and Rice: Stir in the turmeric, garam masala, ground coriander, and salt. Mix well. Add the drained rice to the pot and gently stir to coat the rice with the spices.
  5. Cook the Pulao: Pour in the water or vegetable broth. Bring to a boil, then reduce the heat to low. Cover the pot and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  6. Finish and Serve: Fluff the rice with a fork. Garnish with fresh cilantro and optional raisins or cashews. Serve hot with yogurt or a side salad for a complete meal.
