Ingredients:

  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1/4 cup water (if using taco seasoning)
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños (optional, for heat)
  • 1/2 cup black olives, sliced (optional)
  • 1/2 cup corn kernels (optional)
  • 1/4 cup fresh cilantro, chopped
  • Sour cream and guacamole (for serving)
  • Salsa or pico de gallo (for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cook the Protein: In a large skillet, cook the ground beef or chicken over medium heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed. Add the taco seasoning and water, then stir to combine. Let it simmer for 2-3 minutes, or until the mixture thickens and becomes flavorful.
  3. Layer the Nachos: Spread a generous layer of tortilla chips on the prepared baking sheet. Evenly distribute half of the cooked protein mixture over the chips, followed by a sprinkle of shredded cheddar and mozzarella cheese. Add the remaining protein mixture and top with the remaining cheese.
