Ingredients:

  • 4-6 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • ½ cup Dijon mustard
  • ¼ cup honey
  • ½ cup chicken broth
  • 1 tablespoon soy sauce (optional, for extra depth)
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon cornstarch + 1 tablespoon water (for thickening, optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sear the chicken:
    • Set your Instant Pot to the sauté mode and add the olive oil.
    • Season the chicken thighs with salt, pepper, and paprika.
    • Sear the chicken thighs on both sides until golden brown, about 2-3 minutes per side. Remove and set aside.
  2. Prepare the sauce:
    • Add the minced garlic to the pot and sauté for 1 minute until fragrant.
    • Stir in Dijon mustard, honey, chicken broth, and soy sauce (if using), scraping the bottom of the pot to deglaze and lift any browned bits.
  3. Pressure cook:
    • Return the chicken thighs to the pot, ensuring they’re submerged in the sauce.
    • Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes. Allow a 5-minute natural release, then quick release any remaining pressure.
  4. Thicken the sauce (optional):
    • Remove the chicken thighs and set them aside.
    • Set the Instant Pot back to sauté mode. Mix the cornstarch with water to create a slurry, then stir it into the sauce. Cook for 2-3 minutes, stirring, until the sauce thickens.
  5. Serve:
    • Return the chicken to the sauce to coat. Serve warm, garnished with chopped parsley, over rice, mashed potatoes, or your favorite vegetables.

Enjoy this quick, flavorful, and satisfying dish!
