Herb-Crusted Halibut

This herb-crusted halibut recipe combines the mild, buttery taste of halibut with a zesty blend of fresh herbs, breadcrumbs, and Parmesan cheese for a crispy, golden topping. Ingredients:

  • 4 (6-ounce) halibut fillets
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil, divided
  • 1 cup fresh breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon minced garlic
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • Lemon wedges, for serving

Instructions:

  1. Preheat the Oven
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Season the Halibut
    Pat the halibut fillets dry with a paper towel. Season both sides with salt and pepper, and place them on the prepared baking sheet.
  3. Prepare the Herb Crust
    In a medium bowl, combine the breadcrumbs, parsley, dill, chives, garlic, Parmesan cheese, lemon zest, and 1 tablespoon of olive oil. Mix well until the ingredients are evenly combined.
  4. Coat the Halibut
    Spoon the herb mixture onto the top of each halibut fillet, pressing gently to adhere the crust evenly.
  5. Bake the Halibut
    Drizzle the remaining olive oil over the crusted fillets. Bake in the preheated oven for 12–15 minutes, or until the fish is opaque and flakes easily with a fork, and the crust is golden brown.
  6. Serve
    Remove from the oven and let the fillets rest for 2 minutes. Serve hot with lemon wedges on the side.

  • Swap fresh herbs with dried ones if needed, but reduce the quantity by half for similar flavor intensity.
