Ingredients:

  • 1 lb (450 g) fresh green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella pearls (or diced mozzarella)
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze
  • Salt and freshly ground black pepper, to taste
  • Optional: 1/4 cup toasted pine nuts for garnish

Instructions:

  1. Cook the Green Beans:
    Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until bright green and tender-crisp. Drain and immediately transfer to an ice water bath to stop cooking. Once cooled, drain and pat dry.
