Ingredients:
- 1 box of graham crackers
- 2 cups mini marshmallows
- 1½ cups milk chocolate chips (or chocolate melting wafers)
- 1½ cups heavy whipping cream
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
Instructions:
- Prepare the Chocolate Layer:
- In a microwave-safe bowl, melt the chocolate chips in 20-second intervals, stirring in between, until smooth.
- Line a 9×13-inch baking dish with parchment paper, covering the bottom and sides. Spread a thin, even layer of melted chocolate on the bottom of the dish.
- Place in the freezer for 10 minutes, or until firm.
- Make the Marshmallow Layer:
- In a medium saucepan, melt the mini marshmallows over low heat, stirring constantly until smooth. Let cool slightly.
- In a large bowl, beat the heavy cream to stiff peaks. In another bowl, combine the softened cream cheese, powdered sugar, and vanilla, mixing until smooth. Fold the melted marshmallows into the cream cheese mixture. Gently fold in the whipped cream until fully incorporated.
- Assemble the Layers:
- Remove the dish from the freezer and place a layer of graham crackers over the hardened chocolate, breaking them as needed to fit snugly.
- Spread the marshmallow mixture evenly over the graham crackers. Add another layer of graham crackers on top of the marshmallow mixture.
- Finish with Chocolate:
- Spread the remaining melted chocolate over the top layer of graham crackers. (Reheat the chocolate briefly if it has hardened.)
- Freeze and Serve:
- Cover the dish with foil or plastic wrap and freeze for at least 4 hours, or until set.
- Once frozen, lift the dessert out of the pan using the parchment paper and cut into squares.
Serve immediately and enjoy these delicious frozen s’mores on a warm day!
