COUSCOUS STUFFED TOMATOES

Couscous Stuffed Tomatoes are a light yet satisfying dish that’s bursting with Mediterranean flavors. Juicy, ripe tomatoes are hollowed out and filled with fluffy couscous mixed with fresh herbs, vegetables, and a hint of lemon. Ingredients:

  • 6 medium-sized ripe tomatoes
  • 1 cup cooked couscous
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped cucumber
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Tomatoes: Preheat your oven to 375°F (190°C). Slice off the tops of the tomatoes and set them aside. Use a spoon to carefully scoop out the pulp and seeds, being careful not to puncture the sides. Lightly salt the insides of the tomatoes and place them upside down on a plate to drain while you prepare the filling.
  2. Make the Couscous Filling: In a mixing bowl, combine the cooked couscous, feta cheese (if using), bell pepper, cucumber, red onion, parsley, mint, lemon zest, lemon juice, olive oil, and cumin. Season with salt and pepper to taste and mix well.
  3. Stuff the Tomatoes: Place the hollowed-out tomatoes upright in a baking dish. Fill each tomato generously with the couscous mixture, packing it in gently. Replace the tops of the tomatoes for a decorative touch.
  4. Bake: Drizzle a little olive oil over the stuffed tomatoes and bake in the preheated oven for 20-25 minutes, or until the tomatoes are tender and the filling is heated through.
  5. Serve: Allow the tomatoes to cool slightly before serving. Garnish with extra parsley or mint if desired. These are delicious served warm, at room temperature, or even chilled.
