Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut
  • 1/2 cup sliced almonds (or chopped)
  • 1/2 cup sweetened condensed milk

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Make the Batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Combine the Dry and Wet Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the shredded coconut and sliced almonds.
  4. Bake the Base: Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  5. Add the Topping: While the bars are baking, combine the sweetened condensed milk with a handful of shredded coconut (about 1/4 cup) and sliced almonds. Once the bars are done baking, remove them from the oven and immediately spread the coconut almond mixture on top.
  6. Finish Baking: Return the pan to the oven and bake for an additional 10-12 minutes, or until the topping is golden brown and bubbly.
  7. Cool and Serve: Let the bars cool completely in the pan before cutting them into squares. Serve and enjoy!

These Coconut Almond Bars are the perfect balance of chewy, nutty, and sweet. With their crisp, golden topping and rich, coconut-filled base, they make for a delicious treat that’s both simple to make and absolutely satisfying.
