Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the Chorizo: In a large skillet over medium heat, cook the chorizo, breaking it up with a spoon, until fully cooked and browned, about 5-7 minutes. If needed, add a tablespoon of olive oil to prevent sticking. Remove the cooked chorizo and set aside.
  3. Sauté the Vegetables: In the same skillet, sauté the onion and bell pepper until softened, about 3-4 minutes. Stir in the hash browns and cook for another 3-4 minutes, stirring occasionally. Remove from heat.
