Ingredients:

  • 4 cups broccoli florets (fresh or frozen)
  • 2 cups cooked chicken (shredded or cubed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon lemon juice
  • 1 teaspoon curry powder (optional, for added flavor)
  • 1/2 cup shredded cheddar cheese (for the sauce)
  • 1/2 cup shredded cheddar cheese (for topping)
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter (melted)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the broccoli: If using fresh broccoli, steam or blanch it for 3–4 minutes until tender-crisp. If using frozen broccoli, thaw and drain any excess water.
  3. Layer the ingredients: Spread the cooked broccoli evenly across the bottom of the prepared baking dish. Top with the cooked chicken pieces.
  4. Make the sauce: In a medium bowl, whisk together the cream of chicken soup, mayonnaise, sour cream, lemon juice, curry powder (if using), and 1/2 cup of shredded cheddar cheese. Season with salt and pepper to taste.
  5. Pour the sauce over the broccoli and chicken, spreading it evenly with a spatula.
  6. Add the topping: In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the casserole, followed by the breadcrumb mixture.
  7. Bake the casserole in the preheated oven for 25–30 minutes, or until the top is golden brown and the sauce is bubbling around the edges.
  8. Serve and enjoy: Let the casserole rest for 5 minutes before serving. Pair it with rice, noodles, or a crisp side salad for a complete meal.
