Ingredients

  • 8 ounces of your favorite noodles (soba, udon, or spaghetti)
  • 1 pound beef sirloin or flank steak, thinly sliced
  • 2 tablespoons vegetable oil, divided
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

For the Teriyaki Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Cook the noodles: Cook the noodles according to package instructions. Drain and set aside.
  2. Prepare the teriyaki sauce: In a small bowl, whisk together the soy sauce, mirin, brown sugar, and honey. Set aside.
  3. Cook the beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced beef and cook until browned and cooked through, about 3-4 minutes. Remove the beef from the skillet and set aside.
  4. Sauté the vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion and red bell pepper, and cook for 2-3 minutes until they start to soften. Add the broccoli florets, minced garlic, and grated ginger, and cook for another 2-3 minutes until the vegetables are tender-crisp.
  5. Combine everything: Return the cooked beef to the skillet with the vegetables. Pour the teriyaki sauce over the beef and vegetables. Stir in the cornstarch slurry to thicken the sauce. Cook for 2-3 minutes until the sauce has thickened and everything is well coated.
  6. Add the noodles: Add the cooked noodles to the skillet and toss everything together until the noodles are evenly coated with the sauce and heated through.
  7. Serve: Divide the Beef Teriyaki Noodles among plates. Garnish with sliced green onions and sesame seeds. Serve immediately and enjoy!

This delightful dish is perfect for any occasion, offering a delicious blend of flavors and textures that are sure to please everyone at the table.
