Ingredients:

For the Salmon:

  • 4 salmon fillets (about 6 ounces each)
  • 1/3 cup barbecue sauce (your favorite variety)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

For the Salad:

  • 6 cups mixed greens (arugula, spinach, and romaine work well)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup corn kernels (fresh, canned, or grilled)
  • 1/4 cup crumbled feta cheese (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Salmon:
    • Preheat your grill or oven to 375°F (190°C).
    • Rub the salmon fillets with olive oil, smoked paprika, salt, and pepper. Place them on a grill pan or baking sheet lined with parchment paper.
    • Brush the barbecue sauce generously over the salmon fillets.
    • Grill or bake the salmon for 10-12 minutes, or until it flakes easily with a fork. Set aside to cool slightly.
  2. Make the Dressing:
    • In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
  3. Assemble the Salad:
    • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and corn.
    • Arrange the sliced avocado and crumbled feta on top.
  4. Add the Salmon:
    • Place the slightly cooled salmon fillets on the salad. You can leave the fillets whole or flake them into bite-sized pieces.
  5. Dress and Serve:
    • Drizzle the dressing over the salad just before serving. Toss gently to combine, or serve with the dressing on the side.
