BACON, EGG AND TOAST CUPS

Bacon, Egg, and Toast Cups are a fun and creative twist on a classic breakfast! These individual cups feature crispy bacon, a perfectly cooked egg, and toasted bread all baked together in a muffin tin for a portable and delicious meal. The bacon adds a savory, smoky crunch, while the egg is cooked just right, and the toast provides a comforting base. Ingredients:

  • 6 slices of bacon
  • 6 slices of bread (white, whole wheat, or your preferred choice)
  • 6 large eggs
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Bacon: Preheat your oven to 375°F (190°C). Place the bacon on a baking sheet and cook in the oven for 15-20 minutes, or until crispy. Once cooked, remove the bacon from the oven and drain on paper towels. When cool enough to handle, cut each slice in half.
  2. Prepare the Bread: While the bacon is cooking, lightly toast the bread slices in a toaster or oven. Once toasted, use a round cookie cutter or a drinking glass to cut out the center of each slice, creating a hole in the middle (you can discard or save the cut-out bread for another use).
  3. Assemble the Cups: Grease a muffin tin with cooking spray or butter. Gently press one slice of toast into the bottom of each muffin cup. Place two halves of the cooked bacon around the edges of the muffin cup, forming a circle to create a “nest” for the egg.
  4. Crack the Eggs: Crack one egg into the center of each toast and bacon nest. Season with salt and pepper. If you want to add cheese, sprinkle a little over the egg before baking.
  5. Bake the Cups: Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still soft. For a firmer yolk, bake a little longer, checking every minute.
  6. Serve: Once done, remove from the oven and carefully run a knife around the edges to loosen the cups. Serve hot, with optional toppings like shredded cheese, chives, hot sauce, or fresh herbs.
