Ingredients

For the beef mixture:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the creamy layer:

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese

For the pasta layer:

  • 8 ounces egg noodles
  • 1 cup shredded cheddar cheese (for topping)
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the pasta: Cook the egg noodles according to package instructions. Drain and set aside. Preheat your oven to 350°F (175°C).
  2. Make the beef mixture: Heat olive oil in a large skillet over medium heat. Add diced onion and garlic, cooking until fragrant and softened, about 3-4 minutes. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess grease. Stir in diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5-7 minutes, then remove from heat.
  3. Prepare the creamy layer: In a medium bowl, combine cream cheese, sour cream, and shredded mozzarella. Mix until smooth.
  4. Assemble the casserole: In a greased 9×13-inch baking dish, layer the cooked egg noodles evenly across the bottom. Spread the cream cheese mixture over the noodles. Top with the beef mixture, spreading it evenly. Sprinkle the shredded cheddar cheese over the top.
  5. Bake: Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  6. Garnish and serve: Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley, if desired.

Enjoy this cheesy, flavorful casserole warm and watch it quickly become a family favorite!
