Cherry Cheesecake Egg Rolls

Ingredients:

  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 cup cherry pie filling
  • 8–10 egg roll wrappers
  • 1 egg, beaten (for sealing the wrappers)
  • Vegetable oil (for frying)
  • Powdered sugar, for garnish
  • Chocolate or cherry sauce (optional, for drizzling)

Instructions:

  1. Prepare the Filling: In a medium bowl, beat the cream cheese, sugar, vanilla extract, and almond extract (if using) until smooth and creamy.
  2. Assemble the Egg Rolls:
    • Lay an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape).
    • Spread 1–2 tablespoons of the cream cheese mixture in the center of the wrapper.
    • Add a spoonful of cherry pie filling on top of the cream cheese.
    • Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, sealing the top corner with a bit of the beaten egg. Repeat with the remaining wrappers and filling.
  3. Fry the Egg Rolls:
    • Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
    • Fry the egg rolls in batches for 2–3 minutes per side, or until golden brown and crispy. Use tongs to carefully remove them from the oil and place on a paper towel-lined plate to drain.
  4. Serve:
    • Dust the warm egg rolls with powdered sugar.
    • Drizzle with chocolate or cherry sauce, if desired.
    • Serve immediately and enjoy the crispy, creamy, and fruity goodness!

Tips:

  • For a lighter version, bake the egg rolls in a preheated 400°F (200°C) oven for 12–15 minutes, turning halfway through, or air fry at 375°F (190°C) for 8–10 minutes.
  • You can substitute other fruit fillings, like blueberry or raspberry, for the cherries.
