Crock Pot Chicken Fajitas

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional for heat)
  • Salt and pepper to taste
  • Juice of 1 lime
  • Flour or corn tortillas for serving
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro

Instructions:

  1. Prepare the Crock Pot: In the bottom of your crock pot, layer the sliced onions and bell peppers.
  2. Season the Chicken: In a small bowl, mix the chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, cayenne pepper (if using), salt, and pepper. Rub the seasoning all over the chicken breasts.
  3. Assemble the Ingredients: Place the seasoned chicken breasts on top of the vegetables in the crock pot. Pour the can of diced tomatoes (with juice) over the chicken and drizzle with olive oil.
