This recipe is versatile—feel free to swap in your favorite seasonal vegetables or cheeses for endless variations.

Ingredients:

  • 1 large baguette (about 18 inches long)
  • 4 large eggs
  • 1/3 cup whole milk (or plant-based milk)
  • 1/2 cup shredded mozzarella or cheddar cheese
  • 1/2 cup baby spinach, chopped
  • 1/4 cup cherry tomatoes, diced
  • 1/4 cup bell pepper, finely chopped
  • 2 tablespoons green onions, thinly sliced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the Baguette:
Slice the top third off the baguette lengthwise. Gently hollow out the inside, leaving about 1/2 inch of bread along the sides and bottom to create a boat shape.
  3. Sauté the Vegetables:
In a skillet, heat olive oil over medium heat. Add garlic, bell pepper, and spinach. Cook for 2-3 minutes until the spinach wilts and the peppers soften slightly. Remove from heat and let cool slightly.
  4. Make the Egg Mixture:
In a bowl, whisk together eggs, milk, salt, and pepper. Stir in the sautéed vegetables, cherry tomatoes, green onions, and shredded cheese.
  5. Assemble the Egg Boat:
Place the hollowed baguette on the prepared baking sheet. Carefully pour the egg mixture into the baguette, allowing it to fill evenly.
  6. Bake:
Bake for 20-25 minutes, or until the eggs are set and the top is golden. If the top browns too quickly, tent it with foil.
  7. Garnish and Serve:
Let it cool for a few minutes, then garnish with fresh parsley or chives. Slice and serve warm.

Serving Suggestion:
Pair the Vegetarian Egg Boat with a fresh green salad or a side of fruit for a complete and nutritious meal.
