Ingredients

  • 1/2 pound breakfast sausage (mild or spicy)
  • 1 1/2 cups pancake mix (or 1 cup all-purpose flour + 2 tablespoons sugar + 1 1/2 teaspoons baking powder)
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 tablespoons maple syrup (plus more for serving)
  • 1/4 teaspoon vanilla extract (optional)
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners for easy removal.
  2. Cook the Sausage: In a skillet over medium heat, cook the sausage until fully browned and crumbly, breaking it up with a spoon as it cooks. Drain excess fat and set the sausage aside to cool slightly.
  3. Prepare the Pancake Batter: In a mixing bowl, whisk together the pancake mix (or flour, sugar, and baking powder), milk, egg, melted butter, maple syrup, and vanilla extract (if using). Stir until just combined—be careful not to overmix.
  4. Assemble the Muffins: Spoon a small amount of pancake batter into each muffin cup (about halfway full). Then, add a spoonful of the cooked sausage to each cup, pressing it gently into the batter. If using cheese, sprinkle it on top of the sausage layer.
  5. Bake: Bake the muffin tin in the preheated oven for 12-15 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  6. Serve: Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm with extra maple syrup or your favorite dipping sauce.

These Mini Sausage Pancake Muffins are a perfect make-ahead breakfast or snack. They can be easily stored in the fridge and reheated for a quick, satisfying meal on the go.
