Ingredients:

  • 1 lb pork tenderloin, thinly sliced
  • 1 cup fresh pineapple, chopped into bite-sized pieces
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1/2 onion, thinly sliced
  • 1/2 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil (or vegetable oil)
  • 1/2 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water (if using cornstarch)
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions:

  1. Prepare the Ingredients: Slice the pork tenderloin into thin strips. Chop the pineapple into bite-sized pieces, and slice the bell peppers, onion, and snap peas.
  2. Make the Sauce: In a small bowl, combine soy sauce, hoisin sauce, rice vinegar, and cornstarch (if using). Add water to the cornstarch to dissolve it. Stir to combine and set aside.
  3. Cook the Pork: Heat sesame oil in a large skillet or wok over medium-high heat. Add the sliced pork and cook for 4-5 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
  4. Stir-Fry the Vegetables: In the same skillet, add a little more sesame oil if needed. Add the garlic, ginger, bell peppers, onions, and snap peas. Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.
  5. Combine and Finish: Add the cooked pork and pineapple pieces back into the skillet. Pour the sauce over the pork and vegetables and stir to coat everything evenly. If using cornstarch, the sauce will thicken as it heats. Cook for an additional 2-3 minutes until everything is well combined and heated through.
  6. Serve: Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds. Serve the Pork and Pineapple Stir-Fry with steamed rice or noodles.

This Pork and Pineapple Stir-Fry brings together the perfect mix of savory and sweet, making it a delicious and satisfying meal that’s sure to impress!
