CITRUS CHEESECAKE

Citrus Cheesecake is a creamy, refreshing dessert that perfectly balances rich creaminess with zesty brightness. Infused with the flavors of lemon, lime, and orange, this cheesecake is a tangy twist on the classic favorite. With a buttery graham cracker crust and a luscious citrus-spiked filling, it’s a treat that feels light yet indulgent. Topped with a citrus glaze or slices of fresh fruit, this cheesecake is ideal for summer gatherings, special occasions, or whenever you need a burst of sunshine on your plate.

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

For the Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • Zest of 1 lemon, 1 lime, and 1 orange
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon vanilla extract

For the Topping (optional):

  • 1/2 cup orange marmalade or lemon curd, warmed for glazing
  • Thin slices of lemon, lime, and orange for garnish

Instructions:

  1. Prepare the Crust: Preheat the oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then let it cool.
  2. Make the Filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, citrus zests, juices, and vanilla extract, and mix until the filling is smooth and creamy.
  3. Assemble and Bake: Pour the filling over the cooled crust and spread it evenly. Bake the cheesecake for 50-60 minutes, or until the edges are set but the center jiggles slightly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour to prevent cracking.
  4. Chill: Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.
  5. Decorate and Serve: If using a topping, spread the warmed marmalade or lemon curd over the top of the chilled cheesecake. Garnish with slices of citrus fruits for a vibrant presentation.

Citrus Cheesecake is a show-stopping dessert with a delightful mix of tangy and creamy flavors. Whether for a festive gathering or a quiet indulgence, it’s a refreshing take on a beloved classic.
