Instructions:

  1. Prepare the Oats: In a heatproof bowl, combine the rolled oats and boiling water. Let them sit for about 10 minutes to soften and absorb the water.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, melted butter, honey (or maple syrup), and egg until well combined.
  3. Combine the Dry Ingredients: In another large bowl, whisk together the flour, baking powder, salt, baking soda, and cinnamon (if using).
